AAloo Tuk/For Blog Hop Wednesday

My partner for this month's Blog Hop Wednesday is Sweatha J. She is a versatile blogger. I found almost all the recipes from around the world at her space. Out of all the varieties that she offers in her blog, I opted for Aaloo Tuk from Sindhi cuisine. Crispy finger licking potato was a great hit among my family members.






Ingredients

Boiled Potatoes           4 to 5
Coriander Powder       2 tsp
Red Chilly Powder      1 tsp
Turmeric Powder         a pinch
Black Pepper Powder  1/8 tsp
Salt                              as  per taste
Amchoor Powder         1 tsp
Fresh Coriander
Oil for deep frying


1.  Peel and slice (roundels) the potatoes.
2.  In a mixing bowl, put salt, turmeric powder, red chilli powder, black pepper powder, coriander powder and amchoor powder. Mix very well.
3. Heat sufficient oil in a kadahi. Deep fry the potato slices till golden color.
4. Sprinkle ready masala on each potato slice with few drops of heated oil.
5  Garnish with fresh coriander and green chilly. Serve hot. Enjoy.

Papad Roll



I have bookmarked this from a TV show.

Ingredients
Papad
    6
Boiled and Mashed Potatoes
    1 Bowl
Paneer/Cottage Cheese
    1/2 Bowl
Chopped Onion
    1 Spoon
Chopped Capsicum(red, green, yellow)
    1 Tbsp
Chopped Ginger
    1/2 tsp
Anar Dana Powder
    1/2 tsp
Red Chilli Powder
    1/2 tsp
Garam Masala Powder
    1/2 tsp
Bhujia
    1 tsp
Raisins
    1 tsp
Chopped Cashews
    5-6
Chat Masala
    1/2 tsp
Kasuri Methi
    1/2 tsp
Oil
    To Deep Fry
Salt
    as per taste

Method
1.    Mix all the ingredients in a bowl except papad for the stuffing.
2.    Take another bowl with water in it. Dip a papad in the water which would help in folding it.
3.    Take a little amount of stuffing mixture and place it on the wet papad and then fold the papad as shown in the picture.(like spring rolls)
4.    Now deep fry the papad in hot oil till done.
5.    Drain on an absorbent paper and serve immediately.

MW Dum Aaloo

Serve this all time favourite vegetarian delight to your family and guests and win the compliments.....

Ingredients
Medium Potatoes         6-7            
Ginger Garlic Paste      2 tsp
Onion                           1 finely chopped
Tomatoes                     2 grated
Tomato Puree              1 tbsp
Curd                             2 tbsp
Fresh Cream                2 tbsp
Cashewnut paste         1 tbsp
Turmeric powder         1/4 tsp
Coriander Power         1/2 tsp
Degi Mirch                  1/2 tsp
Javitri                          1/4 tsp
Ratan Jot                     a pinch
Chaat Masala              1/4 tsp
Cooking Oil                 1 tbsp
Coriander leaves         1 tbsp chopped
Green Chilly               1-2 finely chopped
Salt                              to taste

Method
Wash & prick potatoes and boil on micro mode at 100% power for 7-8 minutes.
In a microwave safe bowl put the boiled potatoes. Add little salt, red chilly powder, turmeric powder and garam masala. Add oil and mix well and grill for 3-4 minutes.
In a fresh bowl mix oil, onion and ginger garlic paste. Saute them for 2-3 minutes on full power. Now add all dry masalas and ratan jot, mix well.  Add grated tomatoes and tomato puree. 
Mix well and microwave for 3 minutes.
Add the roasted potatoes, curd, cashew paste, javitri and garam masala.  Mix well and microwave for 3-4 minutes. Garnish with ginger juliens and coriander leaves.  
Now, MW Dum Aaloo is ready to be served with parantha or roti.

TANDOORI ALOO


The aroma and fragrance of mint and kasuri methi gives an invitation to eat it.......!!


INGREDIENTS
Baby Potatoes     1/2 Kg
Thick Curd     1/2 Cup
Cream    1 Tbsp
Chilli Garlic Paste     2 tsp
Garam Masala Powder     1/2 tsp
Chaat Masala     1 tsp

Red Chilli Flakes
    1 tsp
Kasuri Methi     1 tsp
Pudhina Paste     1 tsp
Salt     1 tsp
Oil     1 Tbsp


METHOD
1.   Wash and prick potatoes and boil in microwave at 100% power for 7-8 min..
2.   Mix all ingredients for marinate and dip the boiled potatoes in it.
3.   Keep for half an hour in refrigerator.
4.   Rub a little oil on potatoes and grill for 10-15 min until golden brown. Keep on turning side by side.
5.   Serve hot with chutney.
