Potato Cheesy Bites Mccain style


These cheesy bites are really very delicious and simple to prepare.
                                                 









Ingredients                                                                                                      

Potatoes                                4 (boiled and mashed)
Bread Slice                           5 (dip the bread in water n squeeze)
Corn Flour                            1 Tbsp
Mozrella Cheese                   1/4 cup(grated)
Ginger garlic paste                1 tsp
Green chilly paste                 1 tsp
Red Chilly Powder                1/8 tsp
Salt                                        to taste                                                   
Oil                                          for deep frying                                                    




Method

Mix all the ingredients very well. Check the seasoning and give any shape whatever you like. Heat sufficient oil in a deep bottom pan. Fry the potato cheesy bites till golden brown in color. Serve with green chutney and tomato ketchup. Enjoy!!!

Paneer Butter Masala




Another easier way of providing nutrition to your family. A bit of technique involved , but worth trying.






Ingredients


Paneer/Cottage Cheese                         250 gms
Onions                                                   2 to 3 (sliced)  
Tomatoes                                              4(cut into 4 pieces)  
Green chillies                                        2(chopped)
Garlic cloves                                         5 to 6    
Milk                                                       1 cup                                
Cloves                                                    3 to 4
Fresh cream                                          1 Tbsp
Coriander Powder                                 1 tsp
Degi Mirch                                            1/4 tsp
Red Chilly Powder                                1/4 tsp
Garam Masala                                        1 tsp
Kasoori Methi                                        1 tsp
Oil                                                          2 Tbsp
Butter                                                     1 Tbsp  
Green Cardamom                                    2
Bay Leaf                                                  1   
Crushed coriander seeds                        1 tsp
Salt                                                          to taste


Method

Take half of the oil and butter in a pan and heat. Add crushed coriander seeds. Saute for a minute. Add sliced onion and garlic. Saute till is slightly pink in color. Add chopped tomatoes, green chilly  and salt.  Stir. Cook till tomatoes soften. Add chilli powder and degi mirch and mix. Switch off the fire. Let this mixture cool down and then grind into a paste.

In the same pan add remaining butter and oil.  Switch on the fire.  Put cardamom , clove and bay leaf. Saute for a minute.  Add ground mixture. Cook on slow fire till the oil comes out. Add milk and half cup of water. Cook for five minutes. Add coriander powder and kasoori methi . Mix gently. Add fresh cream, garam masala and paneer cubes. Let  it cook for another two minutes. Serve hot with naan or tandoori roti.

Now for all those who don't know about Sarojni nagar market - it's a flea market where all the sellers use their expert marketing skills to sell as much as they could and the ladies use their god gifted super powers of bargaining, leading to fail all the marketing strategies. So the mantra is " the purchasing price is always less than half of selling price."
Getting back to the bag. The offering price by the seller was of Rs1050. Going by the mantra, I proposed Rs 500. to which he said 'namashkar' to me. That means he was not at all interested in selling the bag at that price. I further came to Rs600, to which he said ' my final offer is Rs1000.' My sane mind did not allowed me to buy anything of that price from sarojni. With a heavy heart I came home.
Now, one time I was on this third world called Facebook. The water on this world is called advertisement. It actually worked as a life saver to me when i saw exactly the same bag being flashed on one of the advertisement. Palak Kofta in Makhani Gravy




Ingredients

For Koftas
Paneer                              150 gms
Boiled Spinach                   25 to 30 leaves
Bread Crumbs                    3 bread slices
Cornflour                            1 Tbsp
Ajawain                              1/4 tsp
Red Chilli Powder               1/4 tsp
Oil                                      3 Cups
Garam Masala                    1/4 tsp
Salt                                     1/2 tsp


Method for Koftas
In  a mixing bowl combine boiled and chopped spinach leaves, paneer, bread crumbs, cornflour,salt, ajwain, red chilli powder and garam masala. Mix very well. Prepare koftas from the ready batter and keep aside.
Heat oil in a deep bottom pan. 


Deep fry the koftas till crisp and golden brown in color. Remove and drain on absorbent paper. Keep aside.








Ingredients
For Makhni Gravy
Butter                                 1 Tbsp
Cumin seeds                       1/4 tsp
Tomato Puree                     1 cup
Red chilli Powder                1/2 tsp
Cumin Powder                    1/4tsp
GG Paste                            1/2 Tbsp
Coriander Powder               1 tsp
Tomato Ketchup                  1 Tbsp
Cashew nut Paste                10 Cashew
Cold Milk                            half cup
Fresh Cream                        2 Tbsp
Kasoori Methi                      1 tsp
Garam Masala                      1/4 tsp
Salt                                      to taste


Method for Makhni Gravy
To prepare Makhni gravy heat butter in a pan along with cumin seeds, red chilly powder, coriander powder and ginger garlic paste. Simmer the fire.  Fry for a second. Add tomato puree. Cook for two to three minutes. Add salt and mix. Add Tomato ketchup and cashewnut paste. Cook for 3 to 4 minutes. Add half cup of water. Stir. Add cold milk. Mix. Now add cream. Cook for another two minutes. Switch off the fire. Add garam masala and kasoori methi.
For serving place Palak Koftas in a serving dish and spread gravy. Garnsih with cream and serve hot with roti or nan.

Til Mil Paneer







Ingredients

Cottage Cheese/Paneer                            250gms
APF/Maida                                              3 Tbsp
Bread Crumbs                                          4Tbsp
Salt                                                           to taste  
Sooji/Semolina                                          1Tbsp
Sesame seeds/Til                                       2Tbsp
Chaat Masala                                            1/4tsp
Garlic crushed                                            1tsp
Red Chilly Powder                                    1/4tsp                                  
Orange Red Color                                     a pinch                              
Oil                                                           for deep frying                      


Method

Cut the paneer in triangles. Apply Chaat masala on both sides and keep aside.
To prepare a thick  batter take a bowl and mix APF, red chilly powder, salt, crushed garlic and water. Keep aside. Mix bread crumbs, semolina, orange red color and sesame seeds in a large plate.
Heat sufficient oil in a deep bottom pan. Dip the paneer triangles in the batter and coat it in the dry mixture nicely. Deep fry each paneer triangle till crisp. Drain on absorbent paper to remove excess oil. Serve hot with green chutney. Enjoy.

Leftover Idli Pakoda

Here is an interesting and tasty twist to the  leftover idlis. These crispy idli fritters make a quick n crunchy tea time snack. Serve piping hot with tomato ketchup and green chutney.


 Ingredients

Leftover idlis                              4 to 5
Besan/Chickpeas flour               one cup
Red chilli powder                        1/4 tsp 
Turmeric powder                       a pinch
Ajwain                                        1/4 tsp 
Oil                                            for deep frying
Salt                                          as per taste   

Method

Cut each idli into four equal pieces and keep aside.
Combine besan, salt, ajwain , turmeric powder and red chilli powder in a mixing bowl.
Add the water slowly to make a smooth thick  batter. Mix well. Heat sufficient oil in a deep bottom pan. 
Dip each piece of idli in batter till it is evently coated from all the sides, slide in hot oil and deep fry on a medium flame till they turn golden brown in colour and crisp from all sides. Drain on absorbent paper. Serve. Enjoy!!!
